Time to get proactive!

I have a weigh in coming in a few days. The fifteenth is around the corner. Based on my last weigh-in, I have 9.5 pounds to meet my first goal. And seeing that yesterday was a relaxing Mother’s Day, I decided to get my meal prep on. Give me a chicken, 3 hours and some veggies and watch me do my thing!

1 whole chicken

Onions, Peppers, Celery (that wonderful trinity)

salt, pepper, garlic and herbs

I chopped the trinity, seasoned the chicken and roasted in the oven for about an hour and 20 minutes. Let the bird cool and voila!

I’ve got lunch through Wednesday.

I also used the leftover trinity to make miniature fritattas. For my sweet tooth, I made sugar free jello with fruit cocktail

 

Can I prepare and eat healthy meals? Yes I can! I am gaining back healthy options, a chance to save money, and an opportunity to get in the kitchen to create.  I’m gaining it all back.
